Cheesy Broccoli and Sausage with Cauliflower Rice

A quick, filling dinner with low carb veggies, cheese, and sausage.

  • 2 tbsp olive oil
  • 1 red pepper diced
  • 1 cup onion diced
  • 4 cup broccoli florets
  • 1 pkg polish sausage sliced
  • 1 tsp minced garlic
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 4 cup riced cauliflower
  • 2 cup cheddar cheese shredded


  • Heat oil in a large skillet over medium heat. Add red pepper and onion, cook until onion begins to become transparent. Add broccoli. Cover and cook for a few minutes until broccoli begins to become tender. Add Polish sausage, cook until sausage is heated through.
  • Add garlic, salt, pepper, and riced cauliflower. Once heated, stir in cheddar and heat until melted.
