Avocado Radish Potato Salad


  • 1 pound of waxy potatoes cut into bite sized pieces
  • 3 radishes minced
  • 1/4 red onion diced
  • 1/2 cucumber diced
  • 1 avocado mashed
  • salt
  • pepper


  • Boil potatoes in salted water until soft. Do not overcook, they need to hold their shape.
  • When potatoes are cooked, drain and rinse under cool water, then place them in a medium bowl. Mix in the radish, onion and cucumber. Finally fold in the mashed avocado.
  • Season with salt and pepper to taste.
