Avocado Radish Potato Salad
of waxy potatoes
cut into bite sized pieces
Boil potatoes in salted water until soft. Do not overcook, they need to hold their shape.
When potatoes are cooked, drain and rinse under cool water, then place them in a medium bowl. Mix in the radish, onion and cucumber. Finally fold in the mashed avocado.
Season with salt and pepper to taste.
