Strawberries, blueberries and watermelon, oh my! Nothing says summer like a refreshing fruit salad. Add in a bit of feta for a tart kick, then smooth it all out with a sweet, complimentary poppyseed dressing. Seriously, this salad is one of my favorites.

I was inspired to make it again after I found the new Quaker® Real Medleys® Yogurt Cups on demo at Walmart the other day. The lady demoing the product was extremely knowledgeable. She told us about the 10g of protein with milk, and made sure we knew to only stir in cold milk because it won’t activate with warm milk. Everyone was excited to try it.

I didn’t know what to expect the first time I tried it because I’ve seen nothing like this before, but wow, it’s delicious! Crunchy. Cool. Yum. We stocked up on several because we enjoyed it so much. I knew as soon as I picked it up that we needed to pair it with my watermelon, berry, and feta salad with poppyseed dressing. It’s the perfect combination to make up a well rounded breakfast for me.

It’s easy to make, here’s how I did it. Just grab a couple of cups of watermelon, about a cup or so of chopped strawberries, about a cup of blueberries, then a half cup to a cup of crumbled feta and mix it up in a bowl. Set the fruit and berries aside and create the poppyseed dressing. You’ll need red wine vinegar, sugar, ground mustard, vegetable oil, and salt. The easy to follow instructions have the amounts, below.

Combine vinegar, sugar, salt and mustard using a blender. I used an immersion blender, but if you don’t have one your counter top blender will work just fine. Once combined slowly start to drizzle in the oil. When everything is mixed to create an emulsion, stir in the poppy seeds.

You can serve this dressing directly over your fruit salad, or, if you’re like me, you’ll serve it on the side so each person can add as much or as little as they want to their salad. I also like to take individual pieces of fruit and dip them in. It tastes fantastic!

Watermelon, Berry, & Feta Salad with Poppyseed Dressing

Ingredients

Fruit Salad (adjust fruits and amounts to taste)

  • 2 cups watermelon chunks
  • 1 cup cut up strawberry
  • 1 cup blueberries
  • 1/2 cup feta cheese crumbles

Poppyseed Dressing

  • 3/4 cup sugar
  • 1/3 cup red wine vinegar
  • 1 tsp ground mustard
  • 3/4 tsp salt
  • 3/4 cup vegetable oil
  • 1 tbsp poppy seeds

Instructions

For the fruit salad combine watermelon, strawberries, blueberries and feta cheese in a bowl. Set aside.

For the poppyseed dressing, combine sugar, vinegar, mustard and salt with a blender or immersion blender. Slowly drizzle in vegetable oil while continuously blending. Once an emulsion has been created stir in the poppy seeds.

Pour desired amount of dressing over the fruit salad, or serve on the side. Enjoy!
