Did you know caramel apple is one of my absolute favorite flavors of the season? We love to make them at home, I grab them at the mall, and of course I can’t pass them up when we’re at the apple orchard picking our annual load of apples to make homemade applesauce and apple butter. Caramel and apples, with a light coating of nuts. Seasonal perfection.

I often get inspiration for my recipes by meandering the aisles of Walmart, and inspiration for today’s recipe was no different. I found a little inspiration in the form of a limited edition product in the dairy aisle, the yogurt section to be specific. Dannon® Greek Yogurt flavors Oikos® Pumpkin Pie Greek Yogurt andLight & Fit® Caramel Apple Pie Yogurt!

Okay, so I’m not using the pumpkin pie flavor for this specific recipe. I’m tucking that one away for a future recipe creation, and I know my family is excited for that little gem. For now, it’s some simple mini caramel apple pie cheesecakes! Mmmmm…cheesecake. No bake! Quick to create. These effortless pies are fantastic to share with my family and they are easy to clean up. Can’t get better than that.

Simple Mini Caramel Apple Pie Cheesecakes

Time to gather up your ingredients to create this delectable seasonal delight. You’ll need 8oz of cream cheese, two containers of Light & Fit® Carmel Apple Pie Yogurt, six Keebler® Ready Crust® Mini Graham Cracker Pie Crusts (they come in a six pack, so it’s easy to grab these), one individual container of applesauce, caramel sauce to drizzle, Reddi-wip®, and crushed nuts to garnish on top.

You could also mix these with a hand mixer or by hand, but I like the ease of the stand mixer. Use a lower speed, the higher speeds will splatter the mix everywhere. You have been warned.

I could easily do four or five folds around the mini pie to have it fully mixed in to spread out the flavor profiles.

Simple Mini Caramel Apple Pie Cheesecakes

Ingredients

  • 8 oz cream cheese
  • 2 containers Light & Fit® Caramel Apple Pie Yogurt
  • Keebler® Ready Crust® Mini Graham Cracker Pie Crust (6 count)
  • 1 individual container applesauce
  • Caramel sauce for drizzle
  • Reddi-wip®
  • Crushed nut topping for garnish

Instructions

  1. Combine the cream cheese and yogurt in stand mixer at low to medium speed until smooth.
  2. Fill all six of the Mini Graham Cracker Pie Crusts with the cream cheese mixture.
  3. Add a small spoonful of applesauce and a small drizzle of caramel sauce to the top of each mini pie. Gently fold into the filling.
  4. Top with Reddi-wip®, then an additional garnish of caramel sauce drizzle and crushed nuts on top.
