My husband and I have learned over the years that we have a lot in common. We also have a lot of interests that aren’t exactly the same, but close enough we can enjoy them together. One of those similar but not quite the same interests is coffee. We both agree coffee is a brilliant way to start the day, get us through our afternoon slump, and even enjoy as an after dinner treat. Ok, really, for us, there isn’t a wrong time of day to enjoy coffee.
The part where we differ in our opinions is the best way to enjoy coffee. He’s all about a hot cup of coffee, even on a scorching summer day. I’m all about the iced coffee. Perfect to cool down on a hot summer day, or to sweeten my middle of winter day.
Our love for coffee could get expensive if we took the time to hit up a coffee shop everyday, multiple times a day. Luckily we don’t have to. My husband is on his own for his hot cuppa joe. He’s okay with that, I’ve made it easy on him. He has a coffee pot, a French Press, and a tea kettle to make instant coffee.
I made things even easier for myself too. International Delight Iced Coffee.
Mocha is my favorite, but I’ll take a Caramel Macchiato every now and then to change things up. This is the kind of liquid gold that keeps me moving and smiling through my day. So much cheaper than a coffee shop, plus it fits conveniently in my refrigerator, so it’s always close by. Just pour it over ice and enjoy. No hassle and it’s available year round!
I like variety though, so it’s fun to incorporate my International Delight Iced Coffee into different recipes. Recently I created Mocha Cheesecake Dip and it was close your eyes and savor the flavor delicious. Light and fluffy with a combination of cheesecake, coffee and chocolate that’s perfect for any gathering, or just to indulge in at home.
Mocha Cheesecake Dip
Gather your ingredients. You’ll want a half cup of International Delight Iced Coffee in Mocha flavor, one package of cream cheese, softened, one cup of heavy whipping cream, about a half cup of chocolate chips, sugar to taste and (not pictured) instant coffee granules to taste.
First pulverize your chocolate chips in the food processor. I was going for the smaller, irregular chip feel that I often get in a coffeeshop mocha recipe when there are still bits of chocolate in the drink. No need to hit up the coffee shop when you can easily create this at home!
Tip: The food processor may heat up the chocolate as it chops up the chips. When they are done processing, store the chocolate bits in the refrigerator until you’re ready for them in your recipe to prevent further melting and clumping.
Next combine the cream cheese and the International Delight coffee. I used a stand mixer with the paddle attachment for this. First cream the cream cheese, then add in the coffee. I started at a lower setting first to avoid splashes, then bumped up the speed as it mixed together. Once the mixture is smooth, transfer to a medium bowl.
Rinse out the bowl to the stand mixer in cold water and put it back on the mixer. You’ll want to use cold water because we’re doing the whipped cream next and if the bowl is warm you’ll have a harder time whipping the cream.
Add in the whipped cream and start the mixer on medium high speed using the whisk attachment. Add in sugar to taste, as well as instant coffee to taste. I used about one teaspoon of coffee granules and one tablespoon of sugar. Use more coffee for a stronger coffee flavor in your finished dip.
I wanted to use the International Delight Iced Coffee in my whipped cream, however by adding another liquid to the cream it would reduce the percentage of butterfat, which would reduce the ability of the cream to whip up. For this reason I opted for the instant coffee granules to flavor the whipped cream.
Tip: Don’t whip the cream too long or it will turn to butter. It mixes up fast at high speed, so keep a close eye on it.
Now gently fold the whipped cream and cream cheese mixture together. Do not stir this mixture. You want it to maintain a fluffy consistency. This is why folding is your best technique at this point. Use a spatula and gently fold the mixture together.
When the whipped cream and cream cheese mixtures are completely combined add in the chocolate bits you made earlier. Again, just fold them in until incorporated.
That’s it! You’re ready to enjoy the dip with graham crackers, chocolate graham crackers, cookies, fruit or pretzels. I added a garnish of chocolate syrup to mine to add a little extra chocolate flavor and give it a pretty look for presenting if you’re putting it out for a crowd.
Ingredients
- 8oz package cream cheese
- 1/2 cup chocolate chips
- 1/2 cup International Delight Iced Coffee, Mocha
- 1 cup heavy whipping cream
- sugar to taste
- instant coffee granules to taste
- chocolate syrup for garnish
- fruit, cookies or pretzels for dipping
Instructions
- Process chocolate chips in food processor until they are broken down to small bits. Place in refrigerator until ready to use.
- Using the paddle attachment on a stand mixer, cream the cream cheese, then add in the International Delight Iced Coffee. Process at medium speed until fully incorporated and smooth. Transfer mixture to a medium bowl.
- Rinse out mixer bowl using cold water and change to whisk attachment. Make whipped cream by adding the heavy cream, sugar and instant coffee granules to the mixing bowl Process at medium high to high speed until whipped cream is formed, stopping before cream turns to butter. I used 1tbsp of sugar and 1 tsp of instant coffee granules. Adjust amounts to your taste.
- Fold together the cream cheese mixture and the whipped cream mixture until completely combined.
- Fold in the chocolate chip bits until just incorporated.
- Place dip in serving bowl and garnish with chocolate syrup if desired.
- Serve with fruit, cookies or pretzels.

You can find the International Delight Iced Coffee in the refrigerated tea and juice section at Walmart. Like I mentioned earlier, Mocha is my favorite because I’m a huge chocolate fan. However a little Caramel Macchiato every now and then is a great way to change things up.
