Mint Chip Chocolate Cookies

The perfect mint chocolate chip cookie recipe for when you're looking for something cool and chocolaty. You know I have a love for combining chocolate and hazelnuts, but did you know I love chocolate and mint combined just as much? There is something about the cool crisp flavor of mint that works so well with the rich full flavor of chocolate. I wanted to create a simple cookie that highlighted these flavors, and in the years that I’ve been making these, everyone loves them. Of course, they are the best right out of the oven, cooled for a couple of minutes with a tall glass of milk, but even cooled completely for a day or two they stay soft and delicious.

Here’s how to make Mint Chip Chocolate Cookies.

Mint Chip Chocolate Cookies

Ingredients

  • 2 cups flour
  • 3/4 cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter, softened
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 cup mint flavored chips

Directions

Preheat oven to 375 F. Line baking sheets with parchment paper.

In a medium bowl combine flour, cocoa powder, baking soda and salt. Whisk together until fully mixed and set aside.

Using an electric mixer or stand mixer cream the butter, sugar and brown sugar. Once creamy add in the eggs and vanilla. Mix until completely combined. Gradually add in the flour mix until completely mixed in. Stir in the mint chips. You can add more than 1 cup of mint chips if you want a mintier cookie.

Roll into approximately 1 inch dough balls and place on the baking sheet, pressing down on them to flatten slightly leaving about 2 inches between each cookie.

Bake for 8 to 10 minutes. The tops of the cookie should crack slightly. Let cookies cool on the baking sheet for about a minute, then transfer to a cooling rack to cool completely.

I learned that if you don’t soften your butter beforehand your cookies won’t bake up the same. Fresh from the fridge, it will be harder to mix for starters, but your cookie will also hold up it’s more rounded shape and there will be little to no flattening or cracking on the surface. Here’s a comparison I did. I baked up two batches just for you to see the difference. They still taste fantastic no matter what though.

    In place of the mint chip can I use peppermint extract and if so how much

      I don’t see why you couldn’t use peppermint extract, but I’m not sure how much. I would start with a smaller amount since mint is always a strong flavoring. Maybe 1/4 tsp, add more if needed. Let us know how it turns out!
