I am so excited! Minions © 2015 Universal Studios. All rights reserved is here! It came out on December 8th, 2015, and you can bet I was out that morning to pick it up. The kids love the minions in Despicable Me! and they were beside themselves waiting for the Minions movie to come to DVD so we could own it, and now we do! For us this was a big deal so celebrating the addition of this movie into our collection needed to have something special. For that I decided to create both a salty and a sweet treat for us to enjoy. Minions movie parfaits and Minions inspired popcorn.
The first thing you’ll need in order to recreate our celebration is Illumination Entertainment’s Minions movie. Let me make this easy for you, just head over to the Minions movie website to find a retailer where the movie is being sold and have some fun exploring the site. It’s a great way to build excitement with the kids! Then head out and pick up your movie. Here’s what it looks like in case you weren’t sure?
Ok, really I just love the minions and wanted to show them off. I’m sure they wouldn’t mind.
While you’re out don’t forget to pick up the things you’ll need for this Minions inspired recipe, and any other minion themed products you want to pick up. For the popcorn grab your favorite microwaveable popcorn and some blue and yellow coated candy. That’s pretty easy. For the pudding you’ll need whole milk, sugar, eggs, cornstarch, vanilla, salt and some yellow food coloring. To make the parfaits pick up some marshmallows, blueberries and chocolate chips.
Let’s start with the pudding creation since it will take the longest.
Minions Movie Vanilla Pudding
You’ll need 4 1/2 cups of whole milk, separated, 1 cup of sugar, 1/3 cup cornstarch, 5 egg yolks, 2 teaspoons vanilla, and 1/2 teaspoon salt.
First whisk your egg yolks, sugar, cornstarch, salt and 1/2 cup of the milk in a large bowl. You’ll be tempering the egg mixture with more milk later, so make sure your bowl is big enough to accommodate this. Set the mixture aside.
Now heat up the remaining 4 cups of milk on the stovetop just until it starts steaming. Don’t let the milk boil.
When the milk starts to steam, slowly pour about half the heated milk to the egg mixture to temper it. Once you have the egg mixture tempered gradually add it to the remaining heated milk and whisk continuously for approximately 5 minutes, or until it thickens to a pudding consistency.
Remove pudding from heat and stir in the vanilla and a few drops of yellow food coloring to achieve a brighter yellow color for your parfait. Transfer the pudding to a bowl and cover with plastic wrap. Make sure the plastic wrap is in contact with the entire surface of the pudding. This will help prevent the pudding from developing a film.
Now the hard part. Chill the pudding for approximately 4 hours. That wait time is killer!
After the agonizing wait for your pudding to set up you can build your parfaits. Gather your ingredients, pudding, blueberries, marshmallows and melted chocolate chips. I suggest waiting until you are ready for the melted chocolate before you actually melt it. It starts to harden up pretty fast. You’ll be using it to pipe the goggle details onto the minions, so you’ll want it to be soft and smooth.
First layer the blueberries and pudding in a glass. Mine was a fairly tall glass, so you may want to do something a bit smaller, it’s up to you.
End with pudding at the very top of the glass.
Now it’s time to create the minion’s goggles. First put one or two miniature marshmallows in the pudding.
Now use the melted chocolate to make the rims of the goggles. I piped with a smaller gauge decorator tip in a pastry bag, but if you want, you can cut a small corner of a sandwich storage bag to pipe it out that way.
And that’s all it takes to create a Minions movie parfait! Add in a salty snack with your favorite popcorn and some blue and yellow coated candy and you’re ready to watch the Minions!
Sweet and salty has always been one of my favorite flavor combinations and I hope you’ll enjoy it too! I know you’re going to love the Minions, who doesn’t love these cute, cuddly little yellow guys?
