I’m serious when I say this, do not dump that pickle juice when you take that last, salty, sour, delicious pickle morsel out of the jar! Save the juice and the jar. There are a ton of recipes you can use pickle juice for, but I use it to give myself a healthy, salty snack when I’m trying to watch what I eat and I’m not in the mood for the same old fruits and vegetables. Here’s how it’s done:
Peel and cut your carrots. Pretty simple, huh.
Grab your pickle jar, juice and all, sans pickles.
Cut carrots so they are shorter than the top of the jar.
Add carrot sticks to the pickle jar.
Eureka! The carrots cause enough displacement of the brine to cover the tops of the carrots in the jar. Now, just replace the lid, stick these in the fridge and enjoy a pickle juice carrot when ever that salty craving hits you.
