When I first heard about DOVE® Fruit I knew I needed to create something with them. The first thing that came to my mind was brownies, because I’ve been craving their fudgey deliciousness lately. Then, after more thought I had the bright idea to make brownie bites! I’ve never made brownie bites before and my mini muffin tins were just calling for me to create with them.

The first thing I did was head out to Walmart to pick up my supplies. I finally found the DOVE® Fruit packets on the end caps of the checkout lanes. There are three delicious flavors to choose from, Cherry, Cranberry, and Blueberry. You can grab up to a $1 off coupon by clicking on this DOVE® Fruit image below.

I love these snacks because they are real fruit covered in DOVE® chocolate. It’s a better for you snack that’s perfect for my tastes! Real fruit and dark chocolate. Did I mention real fruit? That’s a huge thing for me as I’ve been working to adjust my lifestyle just a bit. Small changes can make a big difference!

Brownie Bites with Dove Fruit #ad #LoveDoveFruitsRemember, I said these are the perfect snack. I also said I’ll be using these to make DOVE® Fruit Brownie Bites. It’s important to know that for the Blueberry DOVE® Fruit, which is the one I used for this recipes, you’ll need two entire packages. If you think you’re going to find the need to snack, pick up an extra package. It was extremely hard to resist the urge to snack on a few of these while I was baking. My willpower is improving! If I can resist DOVE® Fruit when it’s sitting right in front of me, I know I’m making strides in the right direction. It was worth waiting for the finished product though, I promise.

Brownie Bites with Dove Fruit #ad #LoveDoveFruitsIn the case of DOVE® Fruit Brownie Bites, size does matter. I compared the size between the Blueberry variety and the Cranberry to show you the difference in size. You’ll want to consider this both for your snacking preferences and for your baking preferences. For these brownie bites I used either three blueberries per brownie bite or one cranberry per brownie bite. Both recipes call for two of the 2.83 oz packets of DOVE® Fruit. If you wanted variety you could buy one of each, or even pick up a larger bag of them.

The first thing you’ll want to do is preheat the oven. Set it for 350 degrees, then lightly grease your mini muffin tins. This recipe will make about 48 brownie bites. For me, that meant two trays. I’ll give you the quick, basic run down of the recipe here, then you’ll find the full, easy to follow recipe at the end of the post, including all ingredient measurements.

For the recipe creations, first make your brownie batter. That’s the best part, right? Well, before eating them, of course. For the batter, first mix your cocoa powder, eggs, vanilla, salt and baking powder. Once that is mixed add in the melted butter and sugar. Finally carefully mix in the flour. Now your batter should look a little something like this.

Brownie Bites with Dove Fruit #ad #LoveDoveFruitsThere you have it, and amazingly delicious and fudgey brownie batter. It’s amazing that it’s possible to improve on this recipe, but it can be done, and that’s what we’re about to do.

First, put approximately a tablespoon of the brownie batter in each mini muffin cup. As I mentioned, I get 48 brownie bites with this recipe. Once each cup is filled you get to add your improvements. I found that with the blueberry DOVE® Fruit you would add three pieces to each brownie bite, because they are smaller. For the cherry and cranberry you’ll add only one to each brownie bite.

Brownie Bites with Dove Fruit #ad #LoveDoveFruitsIf you want to offer a little better for you surprise in the center of each brownie bite, just press your DOVE® Fruit inside and you can easily cover it up with the brownie batter that splurges up. This batter is perfect for this. You’ll notice what I mean if you try it yourself.

Brownie Bites with Dove Fruit #ad #LoveDoveFruitsNow bake these beauties for ten to twelve minutes doing the toothpick test to see if they are done. In case you don’t know what the toothpick test is, it just means to insert a toothpick in the center of the brownie and if it comes out clean, it’s done.

You can see the dark chocolate sort of melted into the brownie leaving scrumptious bite of real fruit for your tastebuds to discover.

DOVE® Fruit Brownie Bites

Ingredients

  • 1 1/4 cup cocoa powder
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 1/4 cup sugar
  • 1 cup butter, melted
  • 1 1/2 cup flour
  • DOVE® Fruit of your choice (I used blueberry)

Instructions

1. Preheat oven to 350 degrees and lightly grease mini muffin tin. Recipe makes 48 brownie bites.

2. In a medium sized mixing bowl, combine cocoa powder, eggs, vanilla, salt and baking powder. Stir until combined.

3. Add in sugar and melted butter. Again stir until fully combined.

4. Finally, add in flour and stir until fully incorporated into the batter.

5. Spoon approximately 1 tablespoon of batter into each mini muffin cup.

6. Press one to three of the DOVE® Fruit into each mound of batter. You can leave them on top, or press them all the way in and cover them with batter. Your brownie bites, your choice.

7. Bake for 10 to 12 minutes or until a toothpick inserted in the brownie bites comes out clean.

8. Remove from the pan to a cooling rack.

      What surprised me is how dark chocolatey (is that a word?) the DOVE made the brownies. You see regular brownies, then when you taste it, it’s amazing how much chocolate flavor is in such a little bite!
