Breakfast is the bane of my existence. Yes, that sounds a bit dramatic, but mornings mixed with food just don’t agree with me. Sometimes it’s because I just haven’t woken up fully yet. Sometimes it’s because my allergies make me feel horrid in the mornings. And sometimes it’s because I slept in and we need to be out the door in five minutes!
There are a multitude of reasons breakfast and I don’t get along, but I don’t think it’s fair that my kids have to suffer because of a long standing disagreement between me and breakfast.
I’m looking to improve my relationship with mornings. I already have a list of things I can do, such as go to bed earlier so I can get up earlier. Get everything organized at night so we’re ready to go in the morning. Give myself a little relaxing wake me up time in the mornings before the rush of the day. And, of course, breakfast. I do think eating a nutritious breakfast is going to help me throughout the day.
I decided to spearhead this mission by dressing breakfast up into something fast, simple and of course disguised as a dessert. I just said my breakfast needed to be nutritious, I didn’t say it couldn’t make me feel like I’m committing a breakfast taboo.
Who wants to eat dessert for breakfast! *Counts everyone’s raised hands.* Every single one of you. I knew this was a good idea!
What’s better? It’s nutritious!
I am a breakfast superhero! You can thank me later, right now we have work to do.
Chocolate Frozen Yogurt Breakfast Treats
We’re making Chocolate Frozen Yogurt Breakfast Treats. I call them treats because they are delicious and feel like a dessert, but they are really a nutritious breakfast! I’m still floored I accomplished this.
First gather your ingredients. I grabbed Carnation Breakfast Essentials® from Sam’s Club. I wanted the big box. We’ll be making these frequently! You’ll want the Rich Milk Chocolate for this recipe. We haven’t tried the Classic French Vanilla yet, but I’m sure it would be good too.
You just need two of serving packets. Just two. Easy to measure since they are individually packaged.
Next grab two cups of vanilla yogurt. If you really want to get creative pick a different flavor, but vanilla is a perfect pairing in this one.
Finally fruit. I used raspberries in mine. You’ll want a half cup of whatever fruit you choose. Obviously make it bite sized by cutting it up if you need to.
Here’s an important detail. These measurements are for the frozen treat molds I own. They can hold about two and a half cups when all are full. To figure this out, I just pulled out a measuring cup and started to fill them with water as a test run. I suggest doing a test run like this on your molds first. If you need more than two and a half cups to fill them just add more fruit. If you need less, fill them then turn the leftovers into a snack right then and there.
Now that we have everything we need it’s time to put this delectable creation together.
First mix the yogurt and Carnation Breakfast Essentials® packets until smooth and fully combined.
Now fold in the fruit. With most fruit you’ll want to use this gentle folding motion so you don’t demolish the fruit, that’s why I waited until the yogurt and Carnation Breakfast Essentials® were mixed together.
Once that’s done, just fill your molds according to their package directions. Pay attention to fill lines so they don’t overflow creating a mess in your freezer. Remember, things like this expand when frozen. This is to make life easier for you, not to make more cleaning for you.
Another tip I have is to remember the yogurt is thicker than the juice you probably normally put into your molds (obviously) so it doesn’t settle as easily. As I filled mine I tapped the bottom of the mold on the counter to help the yogurt mix settle throughout the mold. I also used a chopstick to help release air bubbles. You can use a butter knife if you want. This is a tip I carried over from my crazy awesome canning talents.
With your molds filled add in the sticks and place them in the freezer for about eight torturous hours or overnight. This is the hardest part of the entire recipe. The waiting.
When they’re frozen pull them out of the freezer and hand them around to everyone for a nutritious breakfast! These are great to grab and go for those who are busy. For those who just don’t have the stomach for breakfast, but could eat dessert any hour of the day, these are also for you!
This breakfast has been great for our family for all of the above reasons. It’s getting me back into eating breakfast and it’s much more nutritious than the grab and go stuff I was having my kids eat as we raced out the door. I’m still patting myself on the back for coming up with this brilliant idea to transform yogurt into a delicious chocolate frozen treat with Carnation Breakfast Essentials®. This has really opened my eyes to what breakfast can be instead of what everyone tells me it has to be.
