Pizza night! This is usually the night when I don’t feel like doing too much cooking. While some people are perfectly happy with having a couple of slices and nothing else, this would be my husband and kids, I like to have a little variety. Sure I could dump a bag of lettuce in a bowl and call it good. I do that sometimes. Other times I want something with a little more flavor oomph. I want authentic flavors on my table to share with my family. Pairing a salad with Freschetta pizza accomplishes this with simple flair. Tomatoes, cucumbers and balsamic vinegar reduction is a quick way to add a fun, delicious side dish to your pizza night meal without a lot of effort.

Homemade Pico de Gallo
I’ll be the first to admit to you that my pico de gallo recipe isn’t entirely traditional, but honestly, if it were would I really need to share it with you since you can find the traditional recipe just about anywhere. Traditional pico de gallo will have tomatoes, white onions, peppers (usually serrano or jalapenos),…
Avocado Radish Potato Salad

Cucumber Radish Salad
We’ve had a few deliveries of Door to Door Organics lately and I have to say, the ingredients have been inspiring. Recipe inspiring, that is! I’m a visual person, so even though I know what I’m getting in my subscription boxes and I’m able to customize them, I still have no clue what I’m going to make until I see the actual product. Recently, when I opened my subscription box and found the radishes and spring onions, I knew I was going to make a modified version of my mom’s cucumber salad.
I loved the often simple ingredient creations my mom would make when I was growing up, and no matter how hard I try, it’s near impossible to recreate them. I decided to roll with the punches and instead of recreating them, I’m modifying them and making them my own. It’s still her inspiration, but with a little bit of Sunshine flair. In this case I didn’t change too much. I added radishes and changed the vinegar to apple cider vinegar instead of white vinegar. Basically, it’s the same recipe, just embellished a bit.
