It’s taken me way too long to share this recipe with you. It’s one of my favorite breakfasts. It’s bright, colorful, there are a variety of flavors that partner well, a few different textures, plus it’s filled with nutrition. Ever since I figured out how to cook sunny side up eggs I’ve been using them…
Breakfast
Monster Breakfast Cookies
As a homeschool family back to school means something a bit different for us, though we still have some of the same morning challenges as public school families. Public school families are getting back in the groove of getting up and getting ready to head out the door to school. We’re actually doing that too!
When public school is back in session, that’s when homeschool families get back into field trips, visiting museums and other educational attractions that are no longer populated by the summer crowds. We’re also getting up early so we don’t miss any out of the home classes offered by different organizations, including homeschool co ops. For me, I can’t be late either because I often teach some of those classes.
I’m not a morning person so getting up and cooking up a full bacon and eggs breakfast isn’t going to happen on these days. I’ll be first to admit it. For our household, I recognize we need something quick, easy and something we can grab-n-go if we need to race out of the house fast so we’re not late.
How to Make Sunny Side Up Eggs with Less Oil
What better way to celebrate a sunshine life than with sunny side up eggs for breakfast! I know this isn’t the way everyone likes their eggs, and for some people it’s cringe worthy. For many other people, myself included, this is the best way to enjoy morning eggs, it just takes a little bit of…
Peanut Butter Banana Chocolate Chip Muffins
Not long ago I was really wanting muffins. I had bananas to use up, I sort of wanted peanut butter and glancing through my pantry I found chocolate chips. Yum! These flavors all work great in a smoothie together, why not in a muffin too! I quickly jumped over to Pinterest to look for peanut…
Chocolate Frozen Yogurt Breakfast Treat
Breakfast is the bane of my existence. Yes, that sounds a bit dramatic, but mornings mixed with food just don’t agree with me. Sometimes it’s because I just haven’t woken up fully yet. Sometimes it’s because my allergies make me feel horrid in the mornings. And sometimes it’s because I slept in and we need to be out the door in five minutes!
There are a multitude of reasons breakfast and I don’t get along, but I don’t think it’s fair that my kids have to suffer because of a long standing disagreement between me and breakfast.
I’m looking to improve my relationship with mornings. I already have a list of things I can do, such as go to bed earlier so I can get up earlier. Get everything organized at night so we’re ready to go in the morning. Give myself a little relaxing wake me up time in the mornings before the rush of the day. And, of course, breakfast. I do think eating a nutritious breakfast is going to help me throughout the day.
I decided to spearhead this mission by dressing breakfast up into something fast, simple and of course disguised as a dessert. I just said my breakfast needed to be nutritious, I didn’t say it couldn’t make me feel like I’m committing a breakfast taboo.
Cheesy Ham and Hashbrown Breakfast Casserole
When it comes to cooking no one in this household will deny that my husband reigns supreme on breakfasts. He’s just better at them, no matter what I try, unless it’s a casserole. I win hands down on breakfast casseroles. He’s been hinting to me for the past few months that he wants breakfast casserole. Mainly…
