We’ve had a few deliveries of Door to Door Organics lately and I have to say, the ingredients have been inspiring. Recipe inspiring, that is! I’m a visual person, so even though I know what I’m getting in my subscription boxes and I’m able to customize them, I still have no clue what I’m going to make until I see the actual product. Recently, when I opened my subscription box and found the radishes and spring onions, I knew I was going to make a modified version of my mom’s cucumber salad.
I loved the often simple ingredient creations my mom would make when I was growing up, and no matter how hard I try, it’s near impossible to recreate them. I decided to roll with the punches and instead of recreating them, I’m modifying them and making them my own. It’s still her inspiration, but with a little bit of Sunshine flair. In this case I didn’t change too much. I added radishes and changed the vinegar to apple cider vinegar instead of white vinegar. Basically, it’s the same recipe, just embellished a bit.
