Family meals are important to our household. We’ve recently taken on the tradition of Taco Tuesday and the kids have been all over this wanting more themed weeknight meals. I agreed and decided to start Mangia! Monday’s.
There are a multitude of Italian recipes we can make, although my Monday’s are usually filled and I don’t have the time to make a full, family style meal for friends and family. Luckily I can pick up our favorite Bertolli frozen meals and we’re ready to go with a fantastic Italian meal in less than 30 minutes. Perfect for the busy family who still wants to sit down together for dinner.

It’s my favorite time of year again! Today is the first day of Fall and I’m celebrating with a delicious apple recipe. Every year we go to the apple orchards to pick apples, unfortunately I wasn’t feeling well on the day we had planned so we didn’t get to go. With the orchard being an hour drive away, I’m happy to report that I can still find a wide variety of apples at Bakers!
I like simple drinks. Just pour and enjoy. Sometimes though, I want to add a little something extra to the drink. Sort of how Corona drinkers like to add a wedge of lime. It’s just something to brighten up the flavor. For me though, I like creamy drinks. I’ve always been a fan of the White Russian and Tequila Rose. I’m also a huge fan of Baileys Irish Cream.
Baileys has several flavors I haven’t tried yet, but I intend to, someday. Eventually. For now, just a bit of Baileys makes for a perfect evening drink with my husband. When we’re feeling the need for a little boost of flavor on our Baileys we like to add in a coffee ice cube.
There’s just something about our late summer harvest that gets me in the mood to revamp my pantry. Fresh tomatoes, peppers, cucumbers. Yum! Creating homemade spaghetti sauces, canning tomatoes for soups throughout the year. It’s a wonderful thing and has me ready to toss the pantry and restock with healthier options.
To help give myself some motivation and ideas, and hopefully you as well, I’m sharing a list of healthier options for stocking your pantry and fridge.
My husband and I have learned over the years that we have a lot in common. We also have a lot of interests that aren’t exactly the same, but close enough we can enjoy them together. One of those similar but not quite the same interests is coffee. We both agree coffee is a brilliant way to start the day, get us through our afternoon slump, and even enjoy as an after dinner treat. Ok, really, for us, there isn’t a wrong time of day to enjoy coffee.
The part where we differ in our opinions is the best way to enjoy coffee. He’s all about a hot cup of coffee, even on a scorching summer day. I’m all about the iced coffee. Perfect to cool down on a hot summer day, or to sweeten my middle of winter day.
Our love for coffee could get expensive if we took the time to hit up a coffee shop everyday, multiple times a day. Luckily we don’t have to. My husband is on his own for his hot cuppa joe. He’s okay with that, I’ve made it easy on him. He has a coffee pot, a French Press, and a tea kettle to make instant coffee.
I made things even easier for myself too.
My kids and I have a couple of things in common when it comes to food. We love bright colors and we love sweet & salty mixes. Since the girls have been asking for something new to snack on and we have some road trips on the agenda I thought it was time to create something new. This is how Sweet & Salty Rainbow Snack Mix was created.
Walking around Walmart I was trying to decide what to add in. Rainbow popcorn was a must, as were salty snacks such as pretzels and crackers. Cruising down the cereal aisle, I found exactly what I needed. Fruity Pebbles. Not just any Fruity Pebbles, Marshmallow Fruity Pebbles!
As a homeschool family back to school means something a bit different for us, though we still have some of the same morning challenges as public school families. Public school families are getting back in the groove of getting up and getting ready to head out the door to school. We’re actually doing that too!
When public school is back in session, that’s when homeschool families get back into field trips, visiting museums and other educational attractions that are no longer populated by the summer crowds. We’re also getting up early so we don’t miss any out of the home classes offered by different organizations, including homeschool co ops. For me, I can’t be late either because I often teach some of those classes.
I’m not a morning person so getting up and cooking up a full bacon and eggs breakfast isn’t going to happen on these days. I’ll be first to admit it. For our household, I recognize we need something quick, easy and something we can grab-n-go if we need to race out of the house fast so we’re not late.
This summer has been filled with so many fun outdoor activities I’m beside myself. I love it! We’ve been on hikes, we’ve been swimming, exploring, splash parks, playgrounds, and just plain enjoying the sights and sounds of nature. We’re making wonderful memories, but I’d be lying if I said the heat is on my favorite list. I’m more of a cooler weather person. Not winter, that’s too cold. More like decent spring and fall weather. In between the extremes. For this reason I like to partner my hot summer afternoons with a bit of a colder balance. Water balloon fights, playing in the sprinkler and ice cream.
I seriously just took a moment to sigh in satisfaction at the idea of ice cream.
Earlier this week I created the best milkshake I’ve ever made. I think I need an award for this one. Chocolate, caramel and pecans. That’s right, I made a Turtle Milkshake and I enjoyed every last bit of it.
Because it was so amazing, I decided I should share it with you. Why keep this golden recipe to myself. It needs to be enjoyed by the world.
