The weather is cold but the excitement is hot when it comes to the big game. The only way to properly celebrate is by creating a delicious food spread to enjoy while watching the game from the big screen. Well, the biggest screen you have in your living room that is.

Today I’m sharing my fully loaded steak fajita chili. Not only does it taste amazing served up in a big bowl topped completely with all the fixin’s, but it’s also perfect for some fajita chili themed chili dogs, chili fries, chili mac or just about anything else you can dream up to put chili on.

I have the gift of being a pantry chef. Okay, I’m not technically a chef if you’re going by official definitions, but I do have this amazing ability to look in my fridge, freezer and pantry, pull out a collection of ingredients and create a delicious, better for you meal. My husband loves that I have this ability, but he tells me sometimes I expect him to do the same thing, especially when I’m either sick or so busy I need him to take on dinner.

To help him out I’m creating a collection of “pantry” recipes he can use as a go to list. These recipes will all be created using ingredients that I normally have on hand, so he’ll be able to run through the list and find at least one recipe that will work.

The first recipe in our pantry recipe collection is One Dish Chicken and Orzo Salad.

This recipe is too good not to share, and I’ve been wanting to share it for awhile now. This time around I decided to pick up some Hillshire Farm® Polska Kielbasa. As a nod to the community I grew up in, which was largely of Polish ancestry, a Polish sausage, which is the translation of Polska Kielbasa, was often served with cooked cabbage. So, this dish is sort of a cultural tour of my own personal upbringing, combining the German and Polish influences, which makes it a bit more special to me.

One thing I love when the air gets crisp and cool and the leaves start to change color is none other than a thick, spicy bowl of chili!  I’m a fan of a strong chili powder and cumin flavor in my chili recipe, but I also love to stir in different ingredients to give my chili the same general consistency and flavor, with a little variety each time.

Today I’m sharing my basic chili recipe with all of you. This is a recipe that has won me the hearts of chili fans all over, as well as top praise at chili contests (among my co workers, at least).
