I like simple drinks. Just pour and enjoy. Sometimes though, I want to add a little something extra to the drink. Sort of how Corona drinkers like to add a wedge of lime. It’s just something to brighten up the flavor. For me though, I like creamy drinks. I’ve always been a fan of the White Russian and Tequila Rose. I’m also a huge fan of Baileys Irish Cream.
Baileys has several flavors I haven’t tried yet, but I intend to, someday. Eventually. For now, just a bit of Baileys makes for a perfect evening drink with my husband. When we’re feeling the need for a little boost of flavor on our Baileys we like to add in a coffee ice cube.
It’s simple, just brew some coffee, let it cool, pour it into ice cube trays or molds and freeze. They come out to be a beautiful deep brown coffee color which is a wonderful contrast to the Baileys.
You’ll probably notice I also have an odd shaped ice cube in here. A few months ago my niece gave us a 20 sided die, or D20 for the gamers out there, ice cube mold. If you look closely at it, you can see the numbers on each of the sides. Since we like to play different role playing games that require dice, this was the perfect gift for us and looks fantastic when we use the coffee to make the ice cubes.
You can make just regular coffee ice cubes for this basic recipe, or you can grab your own 20 sided dice ice mold, or any other shape mold to suit your interests. We’ll be using this dice mold to create drinks for our dice game date nights!
For the exact amounts, here’s how we make our Baileys with Coffee Ice Cubes.
Baileys with Coffee Ice Cubes
- 3 oz Baileys Irish Cream
- Coffee ice cubes
Freeze coffee into ice molds. Add two or three coffee ice cubes to a lowball glass. Pour 3 oz Baileys over ice cubes. Serve and enjoy!
Drink this drink slowly to let the coffee ice cube both chill and add a subtle coffee flavor to the drink. The longer you let the coffee ice cube melt, the more coffee flavor you’ll have in your drink. Obviously, if you drink the Baileys down then let it sit for a bit, you’ll get a stronger blast of coffee in the end as it melts to a greater coffee/Baileys ratio.
