Am I the only person in the world who doesn’t like the creamy, mayonnaisy potato salad served up at just about every backyard BBQ known to man? Really, I have nothing against it. I don’t mind it, and maybe I just haven’t found the right recipe, but to me it’s a lot of goop and not a lot of flavor. I want something that packs big flavor without all the goop, so I decided to play around with ingredients and came up with Avocado Radish Potato Salad.
Radishes, red onion and a bit of salt and pepper provide a bite of flavor while the avocado provides the creamy coating on the potatoes. A bit of diced cucumber balances out the bite with a crisp, cool freshness to the dish. It’s the perfect side to pair with a BBQ of any style.
The recipe is easy, you’ll just need half a cucumber, diced, 1/4 of a red onion diced, about three radishes diced or minced, one avocado, mashed, about a pound of fingerling potatoes, cut into bite sized pieces (red potatoes, or any other lower starch, waxy potato will work too) and salt and pepper to taste.
Boil the cut up potatoes in salted water until soft, but don’t overcook them. You want them to be soft but still holding their shape. Once they are boiled, rinse them too cool, then place them in a medium bowl and toss with the cucumber, radish and onion. Next gently fold in the mashed avocado until it’s all coated. Season with salt and pepper to taste. If you want a little extra tang you can mix in a bit of lemon or lime juice. If you opt for lime, I’d also add in some cilantro to really make the flavor pop!
Avocado Radish Potato Salad
- 1 pound of waxy potatoes cut into bite sized pieces
- 3 radishes minced
- 1/4 red onion diced
- 1/2 cucumber diced
- 1 avocado mashed
- Boil potatoes in salted water until soft. Do not overcook, they need to hold their shape.
- When potatoes are cooked, drain and rinse under cool water, then place them in a medium bowl. Mix in the radish, onion and cucumber. Finally fold in the mashed avocado.
- Season with salt and pepper to taste.
