I’m on a mission (again) to eat healthier. I’ve discovered a couple of problems I’ve had as I go back and review my failed attempts at eating healthy in the past.
1. I need variety. I can’t eat the same types of meals day in and day out or I get bored and bring in the junk again.
2. I need quick, easy to grab food that isn’t fruit. No matter how much fruit is around me, it is not a go to food for me. I need different, healthy options.
These are both easier to fix when I make a plan. So, here’s the first step in my plan. Let’s tackle breakfast. A meal that I rarely eat because I’m not one to eat a lot of cereal, and as already established I’m not a fan of fruit. Oatmeal isn’t top on my list either. I love bacon, sausage, pancakes, waffles and eggs, but I suppose the majority of that isn’t healthy.
To help fix my problems first of all I need variety, and second I need to have a variety of easy go to foods when I’m not under one of my cooking spells (they come and go).
Here is a list of 52 healthy breakfast options to help me (and hopefully you) eat better and not feel like eating healthy is a punishment or chore. Some of them will be pretty simple grab and go, others will take a little work. If nothing else, I have one recipe to try each week for the rest of the year!

I recently discovered my favorite go to breakfast in the world is 2 scrambled eggs with salsa on top, 1 avocado on the side and a serving of in season fruit. It’s delicious!!
